Ingredients

For the Salad

  • 200g PDO Feta, cut into generous cubes
  • 200g cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 small red onion, thinly sliced
  • 100g mixed salad leaves (rocket, baby spinach and lamb’s lettuce)
  • 1 green pepper, diced
  • 100g Kalamata olives
  • Small handful of fresh mint leaves
  • Small handful of fresh parsley, roughly chopped

For the Lemon & Herb Dressing

  • 4 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 tsp dried oregano
  • Sea salt
  • Freshly ground black pepper

Optional Garnishes

  • Toasted pine nuts
  • Sliced avocado
  • Pomegranate seeds
  • Fresh basil leaves

Method

1Prepare the Vegetables

Wash and prepare all the vegetables.

Halve the cherry tomatoes, dice the cucumber and green pepper, and finely slice the red onion.

Place everything into a large serving bowl with the mixed salad leaves and Kalamata olives.

2Make the Dressing

In a small bowl or jar, whisk together the extra virgin olive oil, lemon juice, Dijon mustard, honey and dried oregano.

Season with sea salt and freshly ground black pepper to taste.

3Assemble the Salad

Pour the dressing over the salad and gently toss until all the vegetables are evenly coated.

Scatter over the fresh parsley and mint.

Finally, add the PDO Feta cubes, folding them through carefully to keep their shape.

4Finish & Serve

Transfer the salad to a large serving platter or individual bowls.

Finish with an extra drizzle of extra virgin olive oil, a twist of freshly cracked black pepper and your chosen garnishes, such as toasted pine nuts or pomegranate seeds.

Serve immediately while fresh.

Why Choose PDO Feta?

PDO (Protected Designation of Origin) Feta can only be produced in specific regions of Greece using traditional methods and a blend of sheep’s milk, with up to 30% goat’s milk. This certification guarantees its authenticity, delivering the rich, creamy texture and distinctive tangy flavour that make it the perfect centrepiece for this classic Mediterranean salad.

Chef’s tips

  • Use authentic PDO Feta for the best flavour and texture.
  • Chill all the ingredients before serving for a crisp, refreshing salad.
  • Soak the sliced red onion in cold water for 10 minutes before adding to the salad to mellow its flavour.
  • Add the feta just before serving to maintain its creamy texture and prevent it from breaking apart.

Serving suggestion

This Mediterranean Summer PDO Feta Salad pairs beautifully with grilled chicken, lamb, salmon or prawns, making it ideal for summer barbecues and al fresco dining.

For a more substantial meal, add cooked quinoa, couscous or orzo pasta, or serve alongside warm artisan bread for a light yet satisfying lunch.
